    Fruit Cocktail Cake

    List of Ingredients


    • 2 1/4 C. unbleached flour
    • 2 tsp. baking soda
    • 1 tsp. sea salt
    • 1 C. brown sugar, packed
    • 2 jumbo eggs
    • 1/4 C. unsalted butter softened
    • 2 cans fruit cocktail
    • 1 C. milk chocolate chips
    • 1/2 C. nuts


    Instructions


    1. Grease and flour bottom of a 13x9 inch pan. Preheat oven to 350 degrees F.

    2. Combine flour, soda, salt, brown sugar, eggs, butter and 1 can of the fruit cocktail in a mixing bowl. Blend well at lowest speed. Then beat for 2 minutes at medium speed. Drain half the liquid out of second can of fruit cocktail and stir fruit and remainig liquid into the batter. Pour batter into pan. Sprinkle with chcolate chips and nuts. Bake for 35 minutes.
