    Potato Cake

    List of Ingredients

    • 1 C. shortening
    • 2 C. superfine sugar
    • 1 C. hot mashed potatoes
    • 1/2 C. cocoa
    • 4 jumbo eggs
    • 2 C. unbleached flour
    • 1/2 C. milk
    • 2 tsp. baking powder
    • dash of sea salt, nutmeg and cinnamon
    • 1/2 tsp. pure vanilla
    • 1 C. nuts, chopped


    1. Separate egg whites from yolks. Beat egg whites until they form peaks. Set aside.

    2. Cream together shortening and sugar. Add mashed potatoes and mix well. Add cocoa and egg yolks. Add flour alternately with milk, baking powder, salt, nutmeg, cinnamon, vanilla and nuts. Fold in the 4 egg whites. Bake at 375 degrees F. until wooden pick comes out clean.
