    Pumpkin Drop Sugar Cookies

    These "cakey" cookies are easy to whip up on a brisk Fall day.


    List of Ingredients


    • 1/2 C. unsalted butter, softened
    • 1/2 C. vegetable oil
    • 1/2 C. pumpkin, canned
    • 1 C. sugar, granulated
    • 1/2 C. powdered sugar
    • 1 tsp. vanilla
    • 2 eggs, large
    • 4 C. flour, all-purpose
    • 1/4 tsp. cream of tartar
    • 1/2 tsp. sea salt
    • 1 1/2 tsp. pumpkin pie spice
    • pinch cloves, ground


    Instructions


    1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. In a large bowl, stir butter, oil, pumpkin, sugars, vanilla and eggs together until incorporated and smooth. Slowly mix in all dry ingredients until completely incorporated. Using a spoon scoop out dough and roll into balls. Place onto parchment lined baking sheets and flatten to 1/2 inch thick using the bottom of a glass that is dipped often into sugar. Bake 8-9 minutes, making sure bottoms are golden. Frost with Pumpkin frosting.
