    Litha- Pineapple Cookies

    List of Ingredients


    • 1 C. light brown sugar
    • 1 C. superfine sugar
    • 1 C. Crisco
    • 2 jumbo eggs
    • 20 oz. can crushed pineapple, well drained
    • 1 1/2 tsp. pure vanilla
    • 1/2 C. chopped pecans
    • 4 C. unbleached flour
    • 1/2 tsp. sea salt
    • 1 1/2 tsp. baking soda
    • 1/2 tsp. baking powder


    Instructions


    1. Mix together vanilla and pineapple and set aside. Cream crisco, both sugars and eggs. Add pineapple and nuts and stir until well blended. Set aside.

    2. Combine flour, salt, baking soda and baking powder. Mix well.

    3. Stir flour mixture gradually into pineapple mixture. Drop by spoonfuls onto ungreased cookie sheet. Bake for 12-15 minutes at 350 degrees F. Don't stack theses cookies as they will stick together.



    Final Comments


    Only use an electric mixer to cream the crisco, sugars and eggs. For rest of recipe mix by hand.
