    Crab Stuffed Mushrooms

    List of Ingredients


    • 40 medium or large mushrooms
    • 1 lb. lump crab meat
    • 3/4 cup dry bread crumbs
    • 6 green onions, thinly sliced
    • 1/4 cup minced parsley
    • 1 tsp. salt
    • 1 tsp. red (cayenne) pepper
    • 1 1/2 cups shredded Monterey Jack cheese (6oz)
    • 1 cup unsalted butter


    Instructions


    1. Preheat oven 350 degrees
    2. Remove stems from mushrooms. Gently clean mushrooms to remove any dirt.
    3. Place crabmeat in a large bowl; add bread crumbs, green onions, parsley. salt, cayenne and cheese.
    4. In a saucepan, melt 3/4 cup butter; pour melted butter over crabmeat mixture. Toss gently to combine. Do not break up lumps or crabmeat.
    5. Melt remaining 1/4 cup butter in a shallow baking pan large enough to hold mushrooms in a single layer. Tilt pan to coat with melted butter.
    6. Fill each mushroom cap with stuffing; round out stuffing about 1/2 inch above cap.
    7. Bake in preheated oven until mushrooms are dark and juicy and stuffing is lightly browned, about 10 minutes.
