Crab Stuffed Mushrooms

List of Ingredients
- 40 medium or large mushrooms
- 1 lb. lump crab meat
- 3/4 cup dry bread crumbs
- 6 green onions, thinly sliced
- 1/4 cup minced parsley
- 1 tsp. salt
- 1 tsp. red (cayenne) pepper
- 1 1/2 cups shredded Monterey Jack cheese (6oz)
- 1 cup unsalted butter
Instructions
- Preheat oven 350 degrees
- Remove stems from mushrooms. Gently clean mushrooms to remove any dirt.
- Place crabmeat in a large bowl; add bread crumbs, green onions, parsley. salt, cayenne and cheese.
- In a saucepan, melt 3/4 cup butter; pour melted butter over crabmeat mixture. Toss gently to combine. Do not break up lumps or crabmeat.
- Melt remaining 1/4 cup butter in a shallow baking pan large enough to hold mushrooms in a single layer. Tilt pan to coat with melted butter.
- Fill each mushroom cap with stuffing; round out stuffing about 1/2 inch above cap.
- Bake in preheated oven until mushrooms are dark and juicy and stuffing is lightly browned, about 10 minutes.
