    List of Ingredients


    • 2 (27 oz.) cans sauerkraut w/liquid
    • 2 tablespoons light brown sugar
    • 1 tablespoon granulated sugar
    • 1 cup water
    • 6 pounds center cut pork loin


    Instructions


    1. Preheat oven to 450 degrees. Spread sauerkraut in the bottom of a large roasting pan.
    2. Add brown sugar, granulated sugar, water; mix.
    3. Place pork roast on top. Salt and pepper meat to taste. Roast without lid until meat is nicely browned, about 35-40 minutes.
    4. Reduce heat to 250 degrees and cover roaster. Bake slowly for 3 hours. (or more if you like your meat falling apart.)
    5. Cooking the meat longer won't hurt the sauerkraut it gets better the longer it cooks, but you may have to add more water to the meat juices to keep from burning.
