    Spring Greens with Balsamic & Blue Chees

    List of Ingredients


    • 1 or 2 bags of spring greens
    • 1 cup of toasted walnuts, 1 cup or less cranraisins
    • Blue Cheese
    • DRESSING:
    • 1/2 cup Extra Virgin Olive Oil
    • 1 Tbsp. Dijon mustard
    • 3 Tbsps. Balsamic vinegar
    • 1 clove garlic, crushed ( I use more)
    • pepper, to taste


    Instructions


    1. Put salad greens in a large salad bowl. Add toasted walnuts and blue cheese over top of salad. Add cranraisins.

    2. In bowl add all ingredients for salad dressing. Whisk until all ingredients are well blended.

    3. Toss with salad and serve immediately.



    Final Comments


    Toast walnuts in oven at 400 degrees for 5 to 10 minutes. (Watch so they do not burn)
