    My Mom made this. One of the best dishes I remember growing up. I don't know how she made it so I searched for a recipe. I'm a huge fan of the Food Network and am greatful for thier recipes. Its just as I remembered it. Thanks Food Network.


    List of Ingredients


    • 1 Cup cook white rice
    • 2 1/2 Cups milk
    • 3 Lg eggs
    • 3/4 Cup sugar
    • 3/4 Cup raisins
    • 1 Tsp Vanilla extract
    • 1/4 Tsp salt
    • 1/2 Tsp ground cinnamon
    • 1/4 Tsp ground nutmeg


    Instructions


    1. In large bowl stir together the first 7 ingredients.
    2. Place into a baking dish. (I use a Bread pan, glass tin or stoneware)
    3. Place baking dish into a larger pan: pour water into the larger pan at a depth of 1-inch.
    4. Bake for 1 1/2 hours, or until lightly browned and set.
    5. Combine the cinnamon and nutmeg sift over top of pudding
    6. Cool slightly and cut into squares.


    Final Comments


    I do not use the larger pan/water method. I also mix all the ingredients together and just bake as is for about at least 1 hour. I also like to serve it with a dollop of Cognac cream, if served with a classier dinner.
