Baked Rice Pudding

Recipe Introduction
My Mom made this. One of the best dishes I remember growing up. I don't know how she made it so I searched for a recipe. I'm a huge fan of the Food Network and am greatful for thier recipes. Its just as I remembered it. Thanks Food Network.
List of Ingredients
- 1 Cup cook white rice
- 2 1/2 Cups milk
- 3 Lg eggs
- 3/4 Cup sugar
- 3/4 Cup raisins
- 1 Tsp Vanilla extract
- 1/4 Tsp salt
- 1/2 Tsp ground cinnamon
- 1/4 Tsp ground nutmeg
Instructions
- In large bowl stir together the first 7 ingredients.
- Place into a baking dish. (I use a Bread pan, glass tin or stoneware)
- Place baking dish into a larger pan: pour water into the larger pan at a depth of 1-inch.
- Bake for 1 1/2 hours, or until lightly browned and set.
- Combine the cinnamon and nutmeg sift over top of pudding
- Cool slightly and cut into squares.
Final Comments
I do not use the larger pan/water method. I also mix all the ingredients together and just bake as is for about at least 1 hour. I also like to serve it with a dollop of Cognac cream, if served with a classier dinner.
