    Recipe Introduction


    Delicious hot or cold. Do not overcook as it can dry out rapidly. For a milder version scrape out the seeds of the jalapenos.


    List of Ingredients


    • Grated zest of one orange
    • 1/4 cup orange juice
    • 4 tsp. olive oil
    • 1 jalapeno pepper, sliced.
    • 2 garlic cloves, sliced
    • 1 1/2 tsp. ground cumin
    • 1/2 tsp. salt
    • 1/2 tsp. freshly ground pepper
    • One (1 lb) pork tenderloin


    Instructions


    1. Prepare marinade, In a gallon-size sealable plastic bag, combine the orange zest, juice, oil, jalapeno, garlic, cumin, salt and pepper: add the pork. Seal the bag, squeezing out the air:L turn to coat the pork.
    2. Refrigerate, turning the bag occasionally, at least 2 hours or over night.
    3. Preheat oven to 450
    4. Line a roasting pan with foil and spray with nonstick cooking spray. Place tenderloin in the pan; drizzle with the remaining marinade. Roast 5 minutes: reduce oven temp to 350 and roast until an instant-read thermometer registers 165 F, 15-18 minutes.
    5. Let stand 5 minutes before slicing
