    Honey Soy Chicken

    This is a Asian style chicken. Full of flavor and easy to make. I substituted a ginger soy sauce as I did not have any powdered ginger.

    List of Ingredients




    1 1/2 lbs boneless skinless chicken thighs ( most of the fat trimmed off)
    3 Tbsp vegetable oil
    3 Tbsp low sodium soy sauce
    1 tsp sesame oil
    5 Tbsp honey
    4 cloves garlic, minced
    1/2 tsp ground ginger
    1/2 tsp ground black pepper

    Recipe



    Preheat oven 425 degrees. Line 8X8 oven-proof pan with 2 layers of tin foil. This is done to prevent a sticky mess to clean up as the soy n honey at a high cooking temperature makes the pan very STICKY,

    In a small bowl, whisk together all the ingredients. Coat the chicken in the sauce then place chicken in pan. Pour remaking sauce over the chicken.

    Bake uncovered 40 minutes checking occasionally to making sure top of chicken is not browning to quickly. If they are cover with foil and resume baking until chicken is done.

    Remove from oven and let cool for 5 minutes. Transfer to a serving plate. Reserve liquid to pour over top of chicken.

    * I used cornstarch to thicken sauce before pouring over top of cooked chicken. The recipe does not call for this step.

    The recipe also suggested serving with white or brown rice and some steamed vegetables. I made cilantro rice and pan roasted zucchini.

    Pineapple Salsa Salad is a great side to serve with this chicken as well.
