    • 2 eggs, beaten
    • 1 cup sugar
    • 1 tsp. vanilla extract
    • 1/4 cup flour
    • 4 cups diced rhubarb


    Instructions


    1. Whisk together eggs, sugar, vanilla and flour.
    2. Stir in rhubarb
    3. Bake at 350 for 40 minutes in greased 1 1/2 quart baking dish.
    4. Serve warm with whipped cream
