Recipe Introduction
We were given several boxes of peaches, and couldn't find our old recipe. We came up with this, which suits our needs for the times when fresh peaches are available, but not to our liking.
List of Ingredients
- 30 cups peeled and sliced not quite ripe peaches
- 2 cups cornstarch
- 6 cups sugar
- 3 cups water
- 1 tablespoon salt
- 2 tablespoons lemon juice
- 4 tablespoons (yes!) cinnamon
- 4 teaspoons nutmeg
Instructions
- Mix sugar and cornstarch together in a large pan.
- Add water and lemon juice, cook over low heat until sugar is dissolved.
- Add one third of the peaches, cook until they just come to a simmer.
- Add the salt and the rest of the peaches, cook until they are hot enough to go into your canning kettle without the glass jars breaking.
- Fill seven clean quart jars with peach mixture, top with lids and screw rings.
- Put in canner and bring to a boil, boil for 25 minutes.
- CAREFULLY remove them, refrigerate any that have tops that do not seal.
Final Comments
You may want to play around with the spices, adding what you like best.
