    Virginia Slicers

    This is another good pickle, but a bit more work and time is involved.


    List of Ingredients


    • 1 gallon of sliced pickles
    • 1 gallon water
    • 1 cup Kosher salt
    • 1 tablespoon powdered alum
    • 1 tablespoon powdered ginger
    • 6 cups sugar
    • 4 cups cider vinegar
    • 2 cups more water
    • 1 tablespoon celery seed
    • 1 tablespoon more Kosher salt
    • 3 sticks cinnamon
    • 1/2 teaspoon mustard seed
    • 1 tablespoon whole cloves
    • 1 tablespoon chopped ginger or 2 teaspoons ground
    • 1 tablespoon coriander seed


    Instructions


    1. Soak the sliced pickles in brine of the one gallon water and one cup meat salt for six days.
    2. On the evening of the sixth day drain and rinse. Add the alum, water to cover and soak overnight. Then drain and rinse.
    3. Boil for 10 minutes in water to cover and the powdered ginger.
    4. Drain and rinse again.
    5. Then make syrup of sugar, vinegar, 6 cups water, celery seed, salt, cinnamon sticks broken, mustard seed, cloves, whole or powdered ginger and coriander seed. Let come to a boil and add sliced cucumbers and boil for five to ten minutes. Can and seal.
