    Recipe Introduction


    This is a dish that goes great with steaks, or chops and fish.


    List of Ingredients


    • 2 pounds potatoes, peeled and cut into 1/4 inch slices
    • 4 tablespoons butter or olive oil
    • 4 medium tomatoes, peeled or not, sliced into 1/4 inch slices
    • 4 medium onions, thinly sliced and separated into rings
    • salt and pepper to taste


    Instructions


    1. Preheat oven to 375 degrees
    2. Layer bottom of greased casserole with half the potatoes, dot with butter or olive oil, salt and pepper.
    3. Cover with the onions and tomatoes.
    4. Put on second layer of potatoes, then dot well with butter and salt and pepper.
    5. Bake uncovered for 45 minutes or until potatoes are tender.


    Final Comments


    I don't peel the tomatoes, and sometimes make more layers. This dish is also good the next day reheated.
