    San Antonio Squash


    List of Ingredients


    • 4 cups summer squash, cut 1/4 inch thick
    • 2 tablespoons butter
    • 1 tablespooon oil
    • 1 medium onion, chopped
    • 2 cloves minced garlic
    • 3 tablespoons flour
    • 1 1/2 cups warm milk
    • 1 cup grated cheddar or Monterey Jack cheese
    • 1 to 3 chopped jalapeno peppers, or to taste


    Instructions


    1. Preheat oven to 350 degrees.
    2. Butter 8 inch casserole.
    3. Steam squash until slightly tender, drain and spread in casserole, add jalapenos.
    4. Cook onion and garlic in butter and oil, add flour and let cook a few minutes until flour taste gone.
    5. Add warm milk, stir until thickened.
    6. Add cheese.
    7. Bake uncovered for 20 minutes.


    Final Comments


    We use Anahiem chilis in this, and serve it with a roasted chicken.
