    Macaroni Chili

    List of Ingredients

    12 oz. Ground beef (85%lean)
    3/4 cup chopped onions
    1 clove garlic, minced
    15 1/2 oz. Can of red kidney beans, rinsed and drained
    8 oz. Tomato sauce
    8 oz. Stewed tomatoes (with juices), chopped
    3/4 cup macaroni
    1/4 cup water
    2 teaspoons chili powder
    1 tsp. Ground cumin
    1/3 cup finely shredded reduced fat sharp cheddar cheese.

    Recipe

    In a large skillet, cook the ground beef, onions, and garlic until beef is browned, stirring occasionally. Drain and discard the fat and juices.

    Stir in the beans, tomato sauce, tomatoes (with juices), macaroni, water, chili powder, and cumin. Bring to a boil, then reduce the heat. Cover and simmer for 10 minutes. Stir well, stir well, then cover and simmer about 10 minutes more or until the macaroni is tender but firm. Sprinkle with the cheese. Cover andd heat over low heat just until the cheese is melted.

    Serves 6. 280 calories; 11 grams fat; 43 mg. Cholesterol
