    Stuffed Shells

    List of Ingredients


    • 1 bunch of fresh spinach (frozen may be used)
    • A box of large noodle shells
    • 1/2 lb non-fat cottage cheese + 1/2 lb low fat cottage cheese
    • 1 can of olives
    • 1 can of chopped tomatoes
    • 3 large fresh tomatoes (any kind)
    • 1 garlic clove
    • Italian Seasoning (from a shaker) to taste
    • Parmesan Cheese (optional)


    Instructions


    1. Boil noodles ahead of time making sure they're al dente & completely cooled.

    2. Mix sliced olives, cottage cheese, & chopped spinach. Sprinkle italian seasoning in the mix - stir well.

    3. Stuff the cooled shells w/the mixture

    4. Pour 1 can chopped tomatoes over the top. Arrange chopped tomatoes over top. Mince garlic clove and put on top of tomatoes. Sprinkle w/Parmesan Cheese (optional)

    5. Bake @425 for ~40 mins.



    Final Comments


    Serve with green salad and lowfat garlic bread (recipe located in 'lowfat' and 'bread' categories)
