    Halibut Stew, Italian Style
    Ingredients
    1 cup chopped celery
    3/4 cup chopped onion
    1/2 cup chopped green pepper
    1 clove garlic, minced
    2 tbsp. olive oil
    2 (28 oz.) cans whole tomatoes, undrained and chopped
    1 cup tomato juice
    1 cup Chablis or other dry white wine
    1 beef-flavored bouillon cube
    2 tsp. salt
    1 tsp. dried Italian seasoning
    1/8 tsp. Worcestershire sauce
    1/8 tsp. pepper
    1 (9 0z.) pkg. frozen Italian green beans
    1/2 cup long grain rice, uncooked
    2 lbs. halibut, cut into 1" pieces.
    2 tbsp. minced fresh parsley
    Grated Parmesan cheese
    Directions
    Sauté celery, onion, green pepper, and garlic in oil in a
    Dutch oven over med. heat until tender. Add tomatoes and
    next 7 ingredients; bring to a boil. Cover, reduce heat, and
    simmer 5 min. Stir in beans and rice; cover and simmer an
    additional 8 to 10 min. To serve ladle stew into individual
    bowls. Sprinkle with Parmesan cheese.
    Makes 13 cups
