    Cuban Favorite - this one is from Aaron Sanchez


    Recipe Introduction


    This is a dish that is second only to Red Beans and Rice in Cuba and is wonderful. Aaron makes one of the best Picadillos to be found anywhere!


    List of Ingredients


    • 1 tbsp olive oil
    • 2 lbs of lean ground beef
    • 1/2 cup chopped white onion
    • /2 cup diced red bell pepper
    • 1/2 cup diced yellow bell pepper
    • 1/2 tbsp of chopped garlic
    • 3 bay leaves
    • 1 tsp of toasted ground cumin
    • 1/4 cup of sliced green olives
    • 1/4 cup of sliced toasted almonds
    • 1/4 cup of golden raisins
    • 3/4 cup tomato paste
    • 1/4 cup chopped parsley


    Instructions


    1. To start begin by heating a medium dutch oven over a high fire.
    2. To your hot oven add the olive, spread on bottom of the Dutch oven and now add the ground beef.
    3. Be sure to distribute the beef evenly thoughout the pan.
    4. Allow the beef to brown on the bottom by not moving it for five minutes.
    5. As the meat begins to lose it's red tint, start mixing in the onions, peppers, garlic, bay leaves and cumin.
    6. Let it cook for 7 minutes until the vegetables become translucent.
    7. Then add the olives, almonds, raisins, tomato paste and the parsely.
    8. Be sure to mix it thoroughly with a spoon so that the tomato paste is well incorporated.
    9. Season with salt and pepper.


    Final Comments


    Serve with rice and good conversation as the Cubans do!
