    Recipe Introduction


    Tony is from Brazil and knows a good Cataplana. A cataplana is a copper Portuguese cooking pan, but in this recipe we use a Dutch oven and the final product is just fine! He says once again Martha's right on the mark with this recipe!


    List of Ingredients


    • 2 tbsp olive oil (or enough to coat the bottom of Dutch oven)
    • 1 1/2 cups salsa (use your favorite red or green is okay)
    • 2 medium potatoes, peeled and thinly sliced.
    • 2 whole, skinless, boneless chicken breasts (halved)
    • 1 medium onion, thinly sliced.
    • 1 tsp dried oregano
    • Salt and pepper to taste.


    Instructions


    1. Preheat your oven to 350.
    2. Place the olive oil in the bottom of a Dutch oven and distribute to cover the entire bottom of the pan.
    3. Add 1/2 of the salsa on top of the oil.
    4. Next add the layer of potatoes. (thinly sliced - add a nice even layer)
    5. Now lay your chicken breasts on top of the potatoes.
    6. Next do a layer of onion slices.
    7. Now do a layer with the remaining salsa.
    8. Sprinkle oregano on top.
    9. Salt and pepper to your taste.
    10. Cover the Dutch oven and bake for 1 1/2 hours at 350.


    Final Comments


    A little bit of Brazil and Portugal for a nice dinner treat!
