    Peter and Judy's Gruyere Tomato Melts

    Recipe Introduction


    This is a wonderful sandwich to have as a summer lunch. Serves great with a nice summer salad. Also great for veggie friends!


    List of Ingredients


    • 2 English muffins split.
    • 1 large beefsteak tomato cut into 4 nice sized slices and seeded (about 3/4 in thick)
    • 1 cup coarsely grated Gruyere Cheese (about 4 oz)
    • 1/4 cup chopped fresh basil.
    • 2 tbsp dry bread crumbs
    • 2 small garlic cloves (minced)
    • Salt and pepper


    Instructions


    1. Preheat oven to 375
    2. Toast muffins until golden.
    3. Put 1 slice of tomato on top of each muffin half and season with salt and pepper.
    4. Bake on a baking sheet in middle of oven until tomatoes are softened (17 - 20 minutes)
    5. Stire together cheese, basil, bread crumbs and garlic and season with salt and pepper to taste.
    6. Mound cheese mixture on top of the tomatoes and bake until melted, (about another 5 minutes).

    7. Serve


    Final Comments


    Best when used with one of Dee's prize winning tomatoes from her garden!
