Peter and Judy's Gruyere Tomato Melts

Recipe Introduction
This is a wonderful sandwich to have as a summer lunch. Serves great with a nice summer salad. Also great for veggie friends!
List of Ingredients
- 2 English muffins split.
- 1 large beefsteak tomato cut into 4 nice sized slices and seeded (about 3/4 in thick)
- 1 cup coarsely grated Gruyere Cheese (about 4 oz)
- 1/4 cup chopped fresh basil.
- 2 tbsp dry bread crumbs
- 2 small garlic cloves (minced)
- Salt and pepper
Instructions
- Preheat oven to 375
- Toast muffins until golden.
- Put 1 slice of tomato on top of each muffin half and season with salt and pepper.
- Bake on a baking sheet in middle of oven until tomatoes are softened (17 - 20 minutes)
- Stire together cheese, basil, bread crumbs and garlic and season with salt and pepper to taste.
- Mound cheese mixture on top of the tomatoes and bake until melted, (about another 5 minutes).
- Serve
Final Comments
Best when used with one of Dee's prize winning tomatoes from her garden!
