    Recipe Introduction


    This recipe is a rich baked corn (note all the butter). No Thanksgiving or special day ever went by that we did not have this baked corn - it was a family favorite.


    List of Ingredients


    • 4 cans cream style corn (use a good quality corn)
    • 1 sleeve saltine crackers (crushed)
    • 1/2 to 1 stick of butter cut into chunks or pads
    • 2 eggs slightly beaten
    • salt and pepper to taste


    Instructions


    1. Crush the crackers and beat the eggs.
    2. Add together the cream style corn, crackers, butter and 2 slightly beaten eggs.
    3. Salt and pepper to taste. Mix it all well.
    4. Get a large casserole dish (Corningware style with lid) and butter it very well. Add the corn mixture.
    5. Bake at 350 covered for one hour
    6. After one hour, uncover and bake another 1/2 hour. A golden brown crust should form on the top.

    7. Serve hot


    Final Comments


    Being from Minnesota mom always insisted on "good quality corn" and not a cheaper sale brand! She insisted this made a big difference!
