    Father Dan's Zucchini Sweet Bread

    List of Ingredients


    • 3 cups flour
    • 3 cups shredded, unpeeled zucchini
    • 3 large eggs
    • 1 cup extra light olive oil
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 3 cups golden raisins or 1 large can crushed, drained pineapple..your choice
    • 1 1/2 cups sugar
    • 1 cup walnuts, chopped
    • 1 teaspoon vanilla
    • 2 teaspoons cinnamon
    • Lemon Icing:
    • 1 1/2 cups confectioner's sugar
    • 1 tablespoon extra light olive oil
    • 1 teaspoon lemon zest
    • 3 tablespoons lemon juice


    Instructions


    1. In a large bowl, mix together the flour, sugar,cinnamon, salt, baking powder, baking soda,zucchini, raisins (or pineapple)and nuts.
    2. In another bowl, beat eggs, vanilla and oil.
    3. Pour over the flour mixture and stir until thoroughly mixed.
    4. Pour batter into greased bundt pan.
    5. bake at 350* for 1 hour and 15 minutes, or until toothpick comes out clean.
    6. Lemon Icing:
    7. Combine all ingredients.
    8. Drizzle on zucchini bread.
