Father Dan's Zucchini Sweet Bread

List of Ingredients
- 3 cups flour
- 3 cups shredded, unpeeled zucchini
- 3 large eggs
- 1 cup extra light olive oil
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 cups golden raisins or 1 large can crushed, drained pineapple..your choice
- 1 1/2 cups sugar
- 1 cup walnuts, chopped
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- Lemon Icing:
- 1 1/2 cups confectioner's sugar
- 1 tablespoon extra light olive oil
- 1 teaspoon lemon zest
- 3 tablespoons lemon juice
Instructions
- In a large bowl, mix together the flour, sugar,cinnamon, salt, baking powder, baking soda,zucchini, raisins (or pineapple)and nuts.
- In another bowl, beat eggs, vanilla and oil.
- Pour over the flour mixture and stir until thoroughly mixed.
- Pour batter into greased bundt pan.
- bake at 350* for 1 hour and 15 minutes, or until toothpick comes out clean.
- Lemon Icing:
- Combine all ingredients.
- Drizzle on zucchini bread.
