Crawfish Casserole

List of Ingredients
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 cup chopped celery
- 2 cloves garlic , chopped
- 1 stick oleo
- 1 can cheddar cheese soup
- 1 can pimiento and juice
- 3 cup crawfish , raw
- 2 cup rice , cooked
- 1/4 cup bread crumbs
- 1/3 cup parsley
- 1 cup green onions
- Hot sauce to taste
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 can cream of mushroom soup
Instructions
- Saute onion , pepper , garlic and celery in oleo until tender.
- Add soups , parsely , green onion , crawfish and pimiento.
- Heat through.
- Stir in rice and bread crumbs.
- Turn into a 3-quart casserole
- Sprinkle bread crumbs on top
- Bake at 350 for 30 minutes
