    List of Ingredients


    • 2 quarts of chopped fresh figs (about 5 lbs.)
    • 6 cups sugar
    • 1/4 cup lemon juice


    Instructions


    1. To prepare chopped figs; pour boiling water over the figs, let stand for 5 minutes. Drain, stem and chop figs.
    2. Measure and add 3/4 cup water and 6 cups of sugar to prepared figs.
    3. Slowly bring to boiling, stirring occasionally until sugar dissolves
    4. Cook rapidly until thick, stirring frequently to prevent sticking.
    5. Add 1/4 cup lemon juice and cook 1 minute longer.
    6. Pour into hot jars, leaving 1/4" head space.
    7. Process 15 minutes in boiling water.
    8. Makes about 5 pints
