    List of Ingredients


    • 2 tablespoons grated lemon rind
    • 2 tablespoons lemon juice
    • 1 cup flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup butter
    • 1/2 cup sugar
    • 2 eggs, separated
    • 2 tablespoons sugar
    • 1/4 teaspoon ground cinnamon


    Instructions


    1. Sift together flour, baking powder and salt.
    2. Cream butter and add sugar, beating until light and fluffy.
    3. Beat egg yolks until lemon colored and add to butter mixture.
    4. Add flour mixture. Do not overmix, just continue until flour disappears.
    5. Beat egg whites until stiff. Add grated rind and lemon juice, fold in egg whites.
    6. Fill greased muffin pans 3/4 full. Combine 2 tablespoons sugar and cinnamon and sprinkle on top of each muffin.
    7. Bake at 375* for 25 minutes or until done.
    8. Yields: 1 dozen


    Final Comments


    For blueberry muffins, substitute 1 cup blueberries, fresh or canned(drained) or frozen in place of lemon rind and juice.
