    Sweet Potato Souffle

    List of Ingredients




    SOUFFLE
    2-#2 cans of sweet potato’s
    1 tsp cinnamon
    1 cup sugar
    1 tsp corn starch
    4 eggs beaten slightly
    2 sticks butter melted
    1 tsp nutmeg
    1 cup whipping cream

    TOPPING
    2/3 cup brown sugar
    2/3 cup flour
    2 cup pecans chopped well
    1 stick butter at room temp

    Recipe



    Combine all ingredients for soufflé into a large mixing bowl and beat with a mixer until all or nearly all lumps of sweet potato is mashed. The more you whip it here will determine how puffy your soufflé is so mix very well. Preheat oven to 350 and bake uncovered for about 45 min. Before you take out the soufflé put all ingredients of topping into a bowl and mix. Your hands work very well. When you take the soufflé out of the oven take your topping and cover the soufflé. Your hands work very well here. You just will sprinkle it on top, and it will cover very well. Put back in oven for about 20 min. Take it out and watch them devour it.
