Fiesta Casserole
This recipe is from Los Tios in Houston, but it very similar to Mom's Spanish Rice that I grew up on!
List of Ingredients
1 pound ground beef
1 cup chopped onion
½ cup chopped green bell pepper
2 garlic cloves, minced
1 (14 ½ ounce) can stewed tomatoes (may use tomato sauce)
1 ¼ cups water
1 teaspoon instant low-sodium beef bouillon granules
2 to 3 teaspoons chili powder
½ teaspoon ground cumin
1 ½ cups instant rice (regular rice for stove top cooking)Recipe
Microwave directions:
Crumble beef into hard-plastic colander set in a 2-quart casserole. Sprinkle onion, bell pepper and garlic on top. Stirring midway through the cooking, microwave on high 6 to 7 minutes. Discard grease and place meat mixture in casserole. Add tomatoes, breaking up with spoon. Stir in water, bouillon chili powder and cumin. Cover with lid or vented plastic wrap and microwave on high 4 minutes. Stir in rice, re-cover and microwave on high 6 minutes. Let stand for 5 minutes.
Makes 4 servings.
Stove top directions:
brown ground beef, onions, bell pepper and garlic in dutch oven. Add rice, tomato sauce, chili powder, cumin, and beef bullion. Cover, cook 20 minutes until water and tomato sauce is absorbed. Serve with grated cheddar/jack cheeses on top. Serve with cottage cheese and corn.
