    Raspberry Shortbread Bars

    List of Ingredients




    2 cups all purpose flour
    1 cup sugar
    1 teaspoon grated lemon peel
    1/2 cup butter or margarine
    1/2 cup shortening (Crisco)
    1 egg, lightly beaten
    1 cup chopped walnuts
    3/4 cup rasberry preserves

    Recipe



    1. Preheat oven to 350 degrees F. Grease a 13 by 9 inch pan

    2. In large bowl combine flour, sugar and lemon peel.

    3. With pastry blender, cut in butter and shortening until well blended; stir in egg and walnuts.

    4. Reserve half the dough for topping. With floured hand, pat other half of dough into prepared pan.

    5. Spread preserves to 1/2 inch of edge.

    6. Crumble reserved topping evenly over preserves.

    7. Bake for 35 to 40 minutes or until lightly browned. Cool on wire rack.

    Variation: Try using blueberry preserves in place of the rasberry.
