    List of Ingredients




    1/2 cup Vidalia Onion(diced)
    6 tablespoon Butter
    2 cup Milk
    2 cup Heavy Cream
    4 cup Chicken Stock
    4 tablespoon Flour
    8 large Russet Potatoes
    8 oz. Rendered Bacon
    2 sprigs of Thyme
    1 teaspoon Saffron
    salt & black pepper

    Recipe



    Peel and dice potatoes, boil until fork tender. Drain and set aside potatoes.
    Melt the butter over medium heat, add onions and saute' until golden. Add the flour and mix well. Then add the cream, milk, chicken stock then bring to boil.
    lower the heat to a simmer and add thyme and saffron. Cook for 5 minute. Then add the potatoes and cook for another 5 minutes. Add bacon and serve. Add salt and pepper for taste and shredded cheese if wanted.
