    Recipe Introduction


    This is a very moist cake and keeps well in covered container.


    List of Ingredients


    • 2 cup sugar
    • 1 cup salad oil
    • 3 eggs
    • 2 cup flour
    • 2 cup grated zucchini
    • 2 tsp. vanilla
    • 1 tsp. salt
    • 2 tsp.soda
    • 1/4 tsp. baking powder
    • 3/4 cup rolled oats
    • 1 cup nuts,chopped


    Instructions


    1. Mix together dry ingredients .Beat eggs slightly and add sugar. Add oil and blend with dry mixture.
    2. Stir in zucchini and nuts.
    3. Bake in 10x14 pan @350 20-25 minutes or until when pressed in middle, springs back.
    4. Mix together 1/2 cup margarine,3 oz. cream cheese,21/2 cups powdered sugar,1/4 tsp. almond extract and 3 tsp. vanilla. Ice while warm.


    Final Comments


    Delicious,even for those who don't like zucchini.
