    It's easy to make your own marshmallows and they're so soft and fluffy!


    List of Ingredients


    • 2 cups cold water, divided
    • 4 envelopes unflavored gelatin
    • 4 cups sugar
    • 1/8 teaspoon salt
    • 2 teaspoons vanilla extract
    • Confectioner's sugar


    Instructions


    1. In a large mixing bowl, combine ¾ cup of water and gelatin; set aside
    2. In a large heavy saucepan over medium heat, combine sugar, salt and remaining water.
    3. Bring to a boil, stirring occasionally.
    4. Cover and contine cooking for 3 minutes to dissolve any sugar crystals.
    5. Uncover and cook on medium-high heat, without stirring until a candy thermometer reads 270° (soft-crack stage).
    6. Remove from the heat and gradually add to gelatin.
    7. Beat on low speed for 3 minutes.
    8. Add vanilla, beat on medium for 10 minutes.
    9. Spread mixture into a 13 x 9-in. pan that's been sprinkled with confectioner's sugar.
    10. Cover and cool at room temperature for 6 hours or overnight.
    11. Cut into 1-in. squares and roll in confectioner's sugar, nuts or coconut.
    12. Store in airtight containers in a cool dry place.
    13. About 8 dozen
