    This is a wonderful recipe. The chicken stays moist and tender and the smell as it's cooking is out of this world! It's a good one to cook on a weekend when you have time to cook!


    List of Ingredients


    • 3-4 lb. whole chicken
    • 2 teaspoons salt
    • 1 teaspoon paprika
    • ¾ teaspoon pepper
    • ½ teaspoon onion powder
    • ½ teaspoon thyme
    • ¼ teaspoon garlic powder
    • 1 cup onion, chopped


    Instructions


    1. Thoroughly rinse inside and out of chicken.
    2. Combine seasonings and rub on outside of chicken.
    3. Place chicken in a large resealable plastic bag, refrigerate overnight.
    4. Before roasting, stuff the cavity with chopped onion and roast, uncovered at 250° for 5 hours.


    Final Comments


    This will feed 4, so if you need more than that, cook 2 chickens. The cooking time is the same as for 1 chicken.
