Beef Pastitsio

Recipe Introduction
This recipe is really good and filling. The left-overs reheat well too.
List of Ingredients
- 1 lb. ground beef
- 1 cup chopped onion
- 1 can (15 oz.) tomato sauce
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ¼ teaspoon pepper
- 1 garlic clove, minced
- 2 cups uncooked noodles
- 1 cup (4 oz.) shredded cheddar cheese
- 1 egg, beaten
- Cheese Sauce
- 3 tablespoons margarine
- 3 tablespoons flour
- 1½ cups milk
- ½ teaspoon salt
- 1 cup (4 oz.) shredded cheddar cheese
Instructions
- In a skillet, cook beef and onion until meat is brown and onion is tender; drain.
- Stir in tomato sauce, salt, oregano, pepper and garlic.
- Cover and simmer for 15 minutes.
- Meanwhile, cook noodles; drain.
- Combine noodles, cheese and egg; set aside.
- For cheese sauce, melt butter in a heavy saucepan.
- Stir in flour
- Stir in milk
- Cook and stir for 5 minutes or until smooth and thickened.
- Remove from heat and stir in salt and cheese.
- Spoon half of noodle mixture in bottom of 13 x 9-in. pan.
- Cover with meat mixture.
- Top with remaining noodles.
- Spread cheese sauce over the top.
- Bake at 350°, uncovered, for 30 minutes.
- Let stand 5-10 minutes before cutting.
