    The label of Black Eye Peas


    Recipe Introduction


    I got this one from the label of a can of black eye peas, but it is one of our favorite meals. You can add as much tobasco as you want, to suit your tastes.


    List of Ingredients


    • 1 cup chopped onion
    • 1 sweet red pepper, chopped
    • 1 green pepper, chopped
    • 1 cup chopped, cooked ham
    • 2 tablespoons vegetable oil
    • 2-(15 oz. each) cans blackeye peas
    • 1 teaspoon tabasco sauce
    • Cooked white rice


    Instructions


    1. In a large skillet, cook onion, peppers and ham in oil for 4 minutes or until tender.
    2. Drain blackeye peas, reserving ½ cup liquid.
    3. Add blackeye peas, reserved liquid and tobasco sauce to ham mixture.
    4. Heat through and serve spooned over rice.
    5. Yield: 6 servings


    Final Comments


    I normally just add 1 good-sized green pepper to this recipe. Even the kids love this!
