    Eggplant Sandwiches

    List of Ingredients




    1 large eggplant, sliced thin
    FILLING:
    2 eggs
    Parsley
    Bread Crumbs
    Salt & Pepper
    Pignoli Nuts

    Muenster Cheese
    Parmesan Cheese
    Tomato sauce

    Recipe



    Slice eggplant. Sprinkle with salt, place in a strainer and drain about 1 hour. Rinse and pat dry.
    Mix all filling ingredients together, adding just enough breadcrumbs to hold it together. Put 1 T. of filling between 2 slices of eggplant. Fry in oil, cooking on both sides. Layer sandwiches in baking dish. Top each with tomato sauce and Muenster Cheese (put cheese UNDER sauce). Sprinkle top with Parmesan cheese and bake for 20 minutes at 325 degrees.
