    Caesar Salad

    List of Ingredients




    In a large wooden bowl, crush 2-3 cloves of garlic and rub into bowl. Add 2 choped and crushed anchovies, then add:
    1 tsp. dry mustard
    2 drops Tabasco sauce
    Dash of vinegar
    2 egg yolks, well beaten
    1/4 C. Worcestershire sauce
    Juice of 1 lemon
    1/4 - 1/2 C. grated Parmesan cheese
    1/2 - 3/4 C. olive oil
    1 head Romaine lettuce

    Recipe



    Tear lettuce into bowl. Mix dressing mixture in a cruet. Mix all of it with lettuce. Garnish with croutons (Croutons may be made in oven with sliced Italian bread drizzled slightly with oil and baked in oven. Watch the croutons carefully, they bake quickly). THIS MUST BE EATEN IMMEDIATELY AFTER PREPARATION.

    Note: This recipe is the LONG and proper way to make Caesar Salad. Simple way: Put all ingredients, except lettuce and croutons, in a blender and whirr until well blended. Leftover dressing will keep in the refrigerator for about a week. Serve as above.
