    List of Ingredients




    1/2 c vegetable shortening
    1 1/2 c sugar
    2 eggs
    3 c flour
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp cardamom
    1/3 c fresh squeezed lemon juice
    1 tsp vanilla extract
    3 ripe bananas -- mashed
    1 c chopped walnuts
    Cream Filling:
    2 packages cream cheese -- (3 ounce)
    1/4 c sugar
    1/2 tsp cinnamon
    1/4 tsp salt
    1 egg
    1 Tbsp flour
    1 tsp vanilla
    Topping:
    2 Tbsp butter -- melted
    2 Tbsp granulated sugar


    Preheat oven to 350°F. Grease and lightly flour a bundt pan; set aside. In a mixing bowl cream together shortening and 1-1/2 cups sugar. Beat in eggs one at a time, beating well after each addition. Add vanilla and beat well. In a small bowl sift together flour, baking powder, baking soda, cinnamon, nutmeg and cardamom. Beat the dry ingredients into creamed mixture alternating with the lemon juice, starting and ending with dry ingredients. Stir in
    bananas and nuts. Make the filling by combining all of the ingredients and beating well. Spread half of the batter into the prepared pan, drop the filling over the batter by spoonful and then top with the remaining batter. Bake for 45 to 50 minutes or until edges are nicely browned and come away from the sides of the pan. Cool cake in the pan on a wire rack for 10 minutes then invert onto wire rack. Brush cake with the 2 Tbsp of melted butter and
    sprinkle lightly with the 2 Tbsp sugar and allow to cool completely.
