This is another recipe someone requested, but again, it was awhile ago. It's from Recipe Card Collection, a TOH publication. I didn't really follow these directions. I couldn't find the chickn/broccoli soup, so I used broccoli/cheese. And I cooked the broccoli and noodles separate, conbined the sauce ingredients & heated them through, then combined all and baked in the oven. I would add more Parmesan next time, and I also think a dry breadcrumb/butter topping would enhance its flavor.
Broccoli Noodle Supreme
3 c. uncooked egg noodles
2 c. broccoli flowerets
1 can cream of chicken and broccoli soup, undiluted
1/2 c. sour cream
1/3 c. grated Parmesan cheese
1/8 t. pepper
Cook noodles.
Add broccoli during last 5 minutes of cooking; drain. Set aside and keep warm.
In the same pan, combine the soupo, sour cream, Parmesan and pepper; cook and stir until heated through. Return noodles and broccoli to pan; toss to coat.
