Split Pea Soup

2 large onions -- finely chopped
4 cloves garlic -- minced
1 carrot -- finely chopped
2 bay leaves
1/2 tsp sage
1 lb split peas -- dried
1/2 c cooked ham -- chopped
2 1/2 qt beef stock -- or equivalent
1/2 lb fresh mushrooms
1/2 c green onion -- finely chopped
1 ham bone
1/2 tsp sugar
4 dashes Tabasco sauce
salt and pepper -- to taste
Recipe
Spray soup pot with cooking spray, maybe add a bit of olive oil. Saute onions, garlic, carrot, bay leaves, sage over medium fire. Cook until onions are soft.
Add peas, stock, ham, hambone; bring to a boil. reduce heat; simmer 2 hours.
While pot is simmering, slice shrooms and sautee in butter for a few minutes. About 15 minutes before the soup is finished, add shrooms, sugar, Tabasco, salt, pepper, green onions. Simmer 15 minutes more; serve with crisp French bread.
