Need to cook filling a little longer.
List of Ingredients
1 pie crusst
1 1/4~cu sugar
1/2~teas oon salt
1 1/2~cu water, cold
3 egg yolks
2~tables oon butter
1~tables oon Iemon peeI, grated
1/2~cu Iemon juice
3 egg whites
1/4~teas oon cream of tartar
1/2~teas oon vanilla
1/4~cu sugar
Recipe
450.
Bake pie crust. CooI.
In med sauce pan, combine 1 1/4 cups sugar, cornstarch and salt; mix welI.
Gradually stir in cold water until smooth.
Cook over med heat until mixture boils, stirring constantly. Remove from heat.
In sm bowI, beat egg yolks.
Stir 1/4 cup hot mix in.
Gradually stir yolk mixture inot hot mixture in saucepan.
Cook over low heat until mixture boils, sitrring constantly.
BoiI 1 min, stirring contstantly.
Remove from heat; stir in margarine, Iemon peel and juice.
CooI 15 min.
Pour into cooled baked shelI.
Reduce oven temp to 350.
