    List of Ingredients




    4 potato patties
    1 nacho cheese soup, divided
    8 eggs, slightly beaten
    2~tablespoon milk
    2~tablespoon margarine
    1~cup Montery Jack cheese
    GARNISH
    green onions
    sweet pepper

    Recipe



    Cook potatos acc to pkg.
    Meanwhile, stir 1/2 can soup until smooth.
    Gradually blend in eggs.
    For sauce: in 1 qt saucepan, combine remaining soup and milk.
    Over med heat, heat through, stirring conastantly.
    Cover; keep warm.
    In skillet over med heat, in hot margarine, cook egg mix.
    As eggs begin to set, stir lightly so uncooked egg flows to bottom.
    Cook until eggs are set but still moist.
    Sprinkle 1/4 cup cheese over each cooked patty.
    Bake until cheese melts.
    Arrange eggs on top of each potato patty; spoon about 2 tbsp of the sauce over each.
    Garnish with onions and red pepper.
    Makes 4 servings.
