    Cashew Chicken and Broccoli Stir-Fry

    List of Ingredients


    • 1/2 cup fat-free chicken broth
    • 1/4 cup creamy peanut butter
    • 2 tbsp soy sauce
    • 1 tbsp honey
    • dash of ground red pepper
    • 4 cups broccoli florets
    • 3 stalks celery, cut diaganolly into 1/2 inch slices
    • 3 green onions, sliced
    • 2 teaspoons finely chopped, peeled fresh gingerroot, divided
    • 1 lb boneless, skinless chcken breast halves, cut into 1 inch pieces
    • 4 tsp veg oil, divided
    • 2 garlic cloves, pressed, divided
    • 2 pkgs ramen noodles
    • 1/3 cup cashews or peanuts


    Instructions


    1. For sauce, combine chicken broth, peanut butter, soy sauce, honey and ground red pepper. Mix, (mixture will not be smooth) set aside
    2. Heat 2 tsp of the oil over high heat until hot. Add chicken, 1 tsp of the gingerroot and 1 garlic cloves. Cook and stir 6-7 min or until chicken is no longer pink. Remove from skillet.
    3. Reduce heat to medium-high. Heat remaining 2 tsp oil. Add broccoli, celery and remaining gingerroot and garlic. Cook and stir 2 min. Add green onions and continue cooking 2 min or until beggies are crsip-tender. Return chicken to skillet. Stir in sauce; bring to a boil. Remove skillet from heat.
    4. Meanwhile, bring 4 cups of water to a boil. Break noodles and add to boiling water. Cook 3 min, stirring occasionally; drain. Stir noodles into chicken mixture. Sprinkle with cashews. Serve immediately.
