    Creamy Irish Potato soup

    Pretty yummy, but next time I'd add some tender potato chunks too.


    List of Ingredients


    • 2 tbsp butter
    • 4 green onions, sliced
    • 1 stalk celery, sliced
    • 14 oz chicken broth (1 3/4 cups)
    • 1/8 tsp ground black pepper
    • 3 medium potatotes, peeled and sliced 1/4" thick
    • (more potatoes if you follow intro notes)
    • 1 1/2 cups milk


    Instructions


    1. Heat butter in saucepan. Add onions and celery and cook until tender.
    2. Add broth, pepper and ptatoes. Heat to a boil. Cover and cook over low heat 15 min or until potatoes are tender.
    3. Place half the broth mixture and half the milk in blender. Cover and blend until smooth. Repeat with remaining broth mixture and remaining milk.
    4. Return to saucepan. Heat through.
