    I searched and read through LOTS of recipes and created this version.


    List of Ingredients


    • CELERY
    • ONIONS
    • CARROTS
    • GARLIC
    • 28 oz. MUIR GLEN DICED TOMATOES
    • 28 OZ. CAN CRUSHED TOMATOES
    • 1 SERVING SIZED CAN V-8
    • SMALL CAN MUIR GLEN TOMATO PASTE
    • 1/2 TSP. BAKING SODA
    • 1 BAY LEAF
    • KOSHER SALT
    • CRACKED PEPPER
    • 2-3 TABLESPOONS FRESH BASIL
    • 1 OR 2 CANS CHICKEN BROTH
    • 1 CUP HEAVY CREAM
    • 4 OZ. CREAM CHEESE
    • BUTTER
    • OLIVE OIL


    Instructions


    1. Saute first four ingredients in combo of butter and olive oil. Cook until onions are translucent.
    2. Add canned tomatoes, V-8, tomato paste, salt, pepper, chicken broth, bay leaf, basil,and baking soda.
    3. Simmer about an hour. Add salt by taste test and adjust thickness if needed by adding more chicken broth or chicken broth base.
    4. Add cream and cream cheese.
    5. Remove bay leaf before serving


    Final Comments


    Don't be cheap with the tomatoes. If you can't find MUIR GLEN, use the best tomato products you can buy. We tried this with "no-fat half-and-half" also. It was good that way but we could tell the difference.
