Recipe Introduction
I don't have a drop of Irish blood in my veins, but I truly appreciate the joys of Irish culinary culture (subject, of course, to adding a LOT of flavor). This is a very simple and delicious way of serving filet mignon or a similar high-grade cut of beef. Definitely not fat-free but a good recipe for those on carb-restricted diets. I made a few tweaks in this recipe but it really isn't much different. Don't be deterred by the number of steps--this is a very easy dish to make.
List of Ingredients
3 tablespoons butter (divided)
1 tablespoon olive oil
2 shallots (thinly sliced) (divided)
4 filet mignon steaks, sliced about 1 to 1-1/2 inch thickness
6 oz. canned shiitake mushrooms (or canned straw mushrooms)
1/3 cup Irish whiskey (Jameson's or Bushmill's)--DON'T USE AMERICAN WHISKEYS
2/3 cup heavy cream
1 teaspoon cayenne pepper
Salt to taste
Cracked black pepper (enough to coat steaks once cooked)
2-3 oz. blue cheese (crumbled)
Two green onions, greens only (sliced into 1/2-inch tubes)

1. Preheat oven to 225 degrees.
2. In large frying pan, saute one half of the sliced shallots in 2 tablespoons butter on med-high heat for 3 minutes, but don't overcook. Remove from pan but leave as much butter in pan as possible.
3. Add remaining butter and olive oil to pan and increase heat to high. When sizzling, add steaks and cook to desired doneness (esp. for filet, it is traditionally served rare but do what works best for you). Remove steaks, leaving juices/butter in the pan, and place on rimmed cookie sheet.
4. Keeping heat on high, add mushrooms and remaining sliced shallots to pan and saute for 2 minutes. Stir in whiskey, cream, and cayenne until bubbling, then reduce to medium-high heat, stirring occasionally.
5. While sauce is reducing, shake salt over steaks and press black pepper liberally into steaks. Spread crumbles evenly over steaks (they don't have to be covered), and put cookie sheet into oven.
6. When sauce is reduced by about half, remove from heat. Set oven to broil, move cookie sheet to top rack, and broil just until blue cheese melts. Remove from oven.
7. Transfer steaks to individual dinner plates and assemble as follows:
* Steak
* A spoon of sauce
* A few pieces of sauteed shallot
* A few pieces of green onion
* A few pieces of crispy onions
