    Stuffed Red Bell Peppers

    List of Ingredients




    8 large red bell peppers, fat and squat
    2 lbs. hot turkey sausage, chopped
    2 medium onions, chopped
    4 tblsp chopped garlic
    1 cup sun-dried tomatoes (jarred)
    2 boxes Near-East brand whole grain Brown Rice w/ bulgur (roasted garlic flavored)

    Recipe



    Preheat oven to 350 degrees.

    Slice tops off of peppers, discarding stems and seeds. Chop the rest of the tops into small pieces. Arrange peppers in glass casserole dish, open sides up.

    Remove casings from sausage and brown.

    While sausage is browning, begin preparing rice according to directions on box.

    Once sausage is browned, mix in onion, garlic, sun-dried tomatoes, and pieces of chopped peppers and cook until vegetables are soft.

    When rice and sausage mixture are cooked, combine thoroughly and stuff into peppers. Bake for 60-90 minutes at 350 degrees, until peppers are tender.
