Notes:
1. The only reference to jerk tofu recipes I found online was someone who said she tried it and it was a failure. This one is a success--although watch out, it's really spicy! (You can probably cut the jerk seasoning at least in half if you're a wuss)
2. I use Grace brand jerk seasoning because it's a sure thing, but feel free to experiment with other brands.
3. I buy tofu in quart-sized containers at a local produce market, stacked three high. I apologize that I don't know the weight but honestly, it probably doesn't matter. Use enough to feed your table.
4. For starch, you can use rice, rice-and-beans, dirty rice (there are great ones in the box), or pasta. If you use pasta, I recommend smaller ones (elbows, small seashells, etc.) and cook them al dente.
List of Ingredients
3 squares extra-firm tofu
A little cooking oil
2 small/med onions or one large onion, sliced into half rings
1 red bell pepper, seeded and sliced
1 raw broccoli crown, florets only, cut into bite-sized pieces
1/2 jar Grace brand jerk seasoning
3/4 cup (cheap) dry red wine

1. Slice tofu through the middle, then cut into logs. Place on cold non-stick frying pan and cook on medium heat, shaking occasionally, until steam lessens. The idea is to let the moisture cook off before frying.
2. Cut vegetables while tofu is steaming and drop them into pressure cooker. Mix jerk seasoning and wine in large measuring cup until smooth, or shake them in a jar.
3. Add a little oil to the pan and bring to medium/high heat, scraping below to keep them from burning, turning occasionally. Fry until they turn light brown.
4. Dump tofu on top of vegetables, then pour seasoning/wine mixture on top.
5. Set pressure cooker on manual for 15 minutes, then quick release.
6. While pressure cooker is cooking, cook pasta or rice according to instructions.
