Recipe Introduction
I just thought I would try this. It worked out pretty well. Some of the measurements may be a little off, so if you have any kitchen-sense, you may want to turn it on. Note carefully how much hot sauce is in here... for those of you who consider yourself mortal, you may want to replace some of the hot sauce with more soy sauce. Also note that the hot sauce should probably be a red sauce (like Frank's or Sriracha) but nothing expensive like Tabasco.
List of Ingredients
1 pkg of tofu, extra-firm
1/2 cup soy sauce
1/2 cup generic hot sauce
A shaker of sesame seeds (white, dark, or mixed)
A few teaspoons of peppercorns, OR cracked (but not ground) black pepper
2 Tblsp sesame oil
2 Tblsp peanut oil (other veg. oil okay)Recipe
1. Drain tofu, and slice breadth-wise so that you have four half-inch thick sheets of about 2x4 inches.
2. Press tofu sheets on paper towels under heavy object for at least an hour.
3. Pre-heat oven to 400 degrees (note: this can wait a little while, since the tofu will be marinading). Place tofu in single layer in small glass casserole dish. It is fine if they are touching. Mix soy sauce and hot sauce, and pour evenly over tofu, using a rubber spatula to coat evenly. Flip tofu to make sure both sides are coated. You want to make sure that the tofu is not swimming in liquid but you want there to be some additional liquid to be soaked up by the dry tofu. Marinade for about 30 mins.
4. Bake uncovered for 30 minutes.
5. Heat sesame oil and peanut oil in large frying pan until extremely hot. While oil is heating, sprinkle sesame seeds and pepper on one side of tofu, and press them firmly into the tofu with a dry rubber spatula. When oil is at suitable temperature, CAREFULLY place tofu in oil sesame-side down. Sprinkle pepper and sesame seeds on top sides of tofu, and press down (DID I MENTION THAT YOU MUST DO THIS CAREFULLY?). Fry tofu for 3 minutes on each side, so that the outside crisps. Remove from oil and put on paper towels to de-grease. Serve immediately, with rice or ramen.
