Greetings! Now that the holidays are over and the chill is upon us in
Washington state, my thoughts turn to comfort food. This recipe has
been passed down in our family for years but only recently recorded.
It is best served at room temperature.
List of Ingredients
1/2-1 c. shredded Parmesan Reggiano
1/2 c. shredded Pecorino (or any other good
Romano cheese)
2 T. chopped garlic
2 chopped scallions
1 c. Olive Oil
Pepper to taste
2 T. minced Basil, fresh or 1 T. dried (optional) Recipe
Mix all ingredients together and refrigerate at least 2 hours to allow
the flavors to meld. Best served at room temperature.
This works great served on little toasts or crackers. Will keep in
the refrigerator for up to two weeks. Can also be spread on a loaf of
French Bread and heated for a delicious Garlic Cheese Bread.
